MUSHROOM RICE

Side dishes are important to me. However, you don’t have to stick with plain white Rice. Rice can be transformed with a few simple ingredients to elevate your meal. This simple mushroom rice is made with savory mushrooms, rich butter, flavorful vegetable broth, and savory garlic for a simple yet delicious side dish. If you are tempted to buy flavored rice mixes in boxes, it is time to make your own. It’s as simple as that! ūüôā

HOW MUSHROOMS CAN YOU USE?

This Rice can be made with any mushroom you like. Today I used baby Bella mushrooms because they were cheap and produced a rich brown color when sauteed.

What type of Rice should you use?

Any long-grain white can be used. You can use plain white Rice. However, it will be even better if you have basmati or more flavorful jasmine rice. This can be made into a risotto using short-grain Rice like Arborio Rice. However, you will need more broth, so you may need to add it slowly while stirring.

WHAT TYPES OF BROTH CAN I USE?

The flavor of this mushroom rice is only as good as the broth it is cooked in. Make sure you choose a broth that has vibrant flavors. You can use vegetable broth or a mushroom broth if you like. If you don’t have chicken broth or beef broth, it is possible to use them. However, this will alter the flavor and possibly the color of your final dish.

WHAT ELSE CAN YOU ADD?

I prefer to keep my recipes straightforward but then give those looking for more options. You can add some additional ingredients to the mushroom rice to make it extra special.

  • Peas
  • Bacon crumbles
  • Parmesan cheese
  • Spinach
  • Serve with crispy fried onions
  • Green onions

WHAT TO SERVE WITH MUSHROOM ROICE

You can serve mushrooms Rice as a side dish to classic Homemade Meatloaf, Baked Chicken Drumsticks or Herb-Roasted Pork Tenderloin. You can add Roasted Broccoli and a Simple Salad as an additional side dish.

MUSHROOM RICE

This simple side dish of mushroom rice is simple and delicious. It combines earthy mushrooms with savory garlic, rich butter, flavorful vegetable broth, and rich butter.

Prep time: 5 minutes

Cooking Time: 20 minutes

Total Time: 25 minutes

Servings: Each 3/4 cup

INGREDIENTS

  • 8 oz. mushrooms ($1.49)
  • 2 cloves of garlic ($0.16)
  • 3 Tbsp butter divided ($0.30).
  • 1/4 tsp dried rosemary ($0.03)
  • 1/4 teaspoon freshly cracked pepper ($0.02)
  • 1/8 tsp salt ($0.01)
  • 1 cup uncooked long-grain white Rice (uncooked) $0.62
  • 1.5 cups vegetable broth ($0.20)
  • 1 Tbsp chopped fresh Parsley (optional) ($0.10)

INSTRUCTIONS

  • Chop the mushrooms and mince your garlic.
  • In a large skillet, add the mushrooms, garlic and thyme. Saut√© the mushrooms over medium heat until they have released all their water and the water has evaporated from the bottom of your skillet.
  • Continue to cook the Rice and butter for two more minutes.
  • Stir the vegetable broth into the skillet.
  • Cover the skillet with a lid and heat on medium-high. Once the broth reaches a boil, reduce the heat to low. Once the broth reaches a boil, reduce the heat to medium-low or above the simmering point.
  • Allow the Rice to simmer for 15 minutes without stirring or removing its lid. Let the rice sit for 15 minutes on the stovetop.
  • Remove the lid and fluff the rice using a fork. Taste and adjust salt or pepper as a garnish, and top with chopped fresh parsley.
